A delicious and healthy watermelon salad recipe provided by Heart and Vascular Nurse Navigator Donna Taylor.

Ingredients:

  • 4 cups watermelon, chilled and cubed without seeds
  • ½ cup crumbled feta cheese
  • 7 oz arugula
  • ¼ small red onion, thinly sliced
  • Sliced black olives, optional
  • 2 Tbsp. balsamic glaze or aged balsamic vinegar
  • Salt and pepper to taste

Lightly toss together first five ingredients in a shallow wide bowl. Drizzle balsamic over ingredients and enjoy!
