A delicious and healthy watermelon salad recipe provided by Heart and Vascular Nurse Navigator Donna Taylor.
Ingredients:
- 4 cups watermelon, chilled and cubed without seeds
- ½ cup crumbled feta cheese
- 7 oz arugula
- ¼ small red onion, thinly sliced
- Sliced black olives, optional
- 2 Tbsp. balsamic glaze or aged balsamic vinegar
- Salt and pepper to taste
Lightly toss together first five ingredients in a shallow wide bowl. Drizzle balsamic over ingredients and enjoy!
